Potato Soup

It's funny, my mom used to beg me to help her cook when I came home for Christmas. I usually would drag my feet and not want to do it. I think it's all the cooking blogs I follow and recipes I see on Pinterest, but this year I ASK to cook. Mostly I just want to use the Kitchenaid mixer.  

It's cold and rainy in Pittsburgh today, so I decided to make potato soup with my mom's friend Audrey's recipe.

1 package frozen shredded hash browns (30 oz)
3 cups chicken broth
1 can cream of mushroom soup
1/2/ cup green onions
1/4 tsp pepper

Put all ingredients in a crock pot and stir. Cook on low for 4 hours. After 4 hours add an 8 oz package of cream cheese and stir in. Cook for an additional 30 minutes.

I added some chopped bacon, corn and grated cheddar cheese. We ate it with some yummy bread and vegetables.
